Description
Soft and chewy oatmeal cookies packed with finely chopped baking apples and finished with a generous drizzle of warm caramel.
Ingredients
Scale
- 1/2 cup plus 2 tbsp unsalted butter, softened
- 1 cup plus 2 tbsp brown sugar, packed
- 1 large egg
- 2 tbsp milk
- 3/4 tsp pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 cups old-fashioned oats
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2 baking apples, peeled and finely chopped
- 20 soft chewy caramels, unwrapped
- 2 tbsp water
Instructions
- Preheat your oven to 325°F (165°C) and line two large baking sheets with parchment paper.
- In a medium bowl, stir together the all-purpose flour, old-fashioned oats, baking soda, and salt.
- In a large mixing bowl, cream the softened butter and packed brown sugar together until light and fluffy.
- Beat the egg, milk, and vanilla extract into the creamed butter mixture until completely smooth.
- Gently fold the dry oat mixture into the wet ingredients just until combined.
- Fold in the finely chopped apples gently, being careful not to overmix the dough.
- Drop rounded tablespoons of dough onto your prepared baking sheets, leaving about 2 inches of space between each cookie. Bake for about 14 minutes, or until the edges are golden brown.
- Carefully transfer the warm cookies to a wire rack and let them cool completely before drizzling.
- In a small saucepan, combine the unwrapped soft caramels and 2 tbsp of water. Heat over low, stirring frequently for about 7 minutes until smooth and fully melted.
- Drizzle the warm caramel generously over the cooled cookies. Let the caramel set for about 15 minutes before serving.
Notes
Dice the apples into small, uniform pieces and choose firm baking apples such as Honeycrisp, Granny Smith, or Braeburn. Use old-fashioned rolled oats for the best classic, hearty texture.
